Ginseng chicken soup with rice stuffing
How to Make Samgyetang (Traditional & Healthy Version)
Samgyetang, or Korean Ginseng Chicken Soup, is a cherished dish in Korea renowned for its restorative and nourishing qualities. Traditionally enjoyed during the hot summer months, especially during Sambok (the hottest days), Samgyetang is believed to replenish energy and boost stamina. This wholesome soup features a whole young chicken stuffed with glutinous rice, ginseng (insam), jujubes (daechu), garlic, and sometimes medicinal herbs, simmered to tender perfection. The resulting broth is deeply aromatic, subtly sweet, and packed with nutrition. Samgyetang is often served bubbling hot, accompanied by a variety of banchan (Korean side dishes) such as kimchi and kkakdugi (radish kimchi), which add a refreshing contrast to the savory soup. The inclusion of fermented foods as banchan enhances not only the taste but also the digestive benefits of the meal. This dish holds a special place in Korea's culinary culture, symbolizing health and vitality passed down through generations.
